Description
The MCE Meccanica RETARDER fermentation chamber with floor is a highly efficient machine for the automated control of slow proofing and fermentation processes for bakery and pastry products. Designed to work with 60x40 cm trays and to accommodate up to 2 trolleys placed one behind the other, it guarantees precise temperature and humidity control via a 5-inch touch screen. The tunnel-type chamber is made of modular isothermal sandwich panels (60 mm) with a polyurethane coating, which ensures high thermal insulation and prevents the formation of mold and moisture. The rapid panel alignment system, reliable doors on self-lifting hinges, and the possibility of covering with AISI 304 stainless steel on request make this chamber robust and durable. Equipped with an efficient evaporator and tropical condenser, it can operate at temperatures up to +40 C, ensuring stable cooling even in hot conditions. The compressor with R404A refrigerant is environmentally friendly, and the digital or electromechanical control panel allows you to easily adjust the parameters for optimal operation. The chamber complies with European standards and ensures uniform air distribution, which guarantees perfect results at all stages of fermentation.Specification
