The Thermogel Topazio 93TOP2R/80x100W fermentation chamber is a device designed to provide optimal conditions for the fermentation process in the production of pastry dough.
The WINTER system is a development for cooling at a low temperature of -20°C for fermentation of products with a high fat or sugar content. The development includes the following functions:
- Cooling system with semi-hermetic compressors with protection, ultra-tropical condenser, special air evaporators of our design with thermostatic valve with adjustable tip.
- Patented system and air distribution for perfect uniformity of distribution over the entire surface of the bread.
- Electronic panel on PLC microprocessor Digith Clima, supplemented by a manually adjustable function in 2 steps at temperatures programmed by time.
- Interior lighting with ignition point on the panel.
