Description
The Sottoriva CLI/2 384 preliminary proofing chamber is a modular system that ferments round dough pieces for the time required for a particular type. The frontal location of the control unit ensures ease and convenience of use. Upon additional request, the chamber can be equipped with an automatic heating and humidification system. The chamber configuration depends on the proofing time and production speed. The chamber design provides for removable pockets that simplify equipment maintenance.
2 working rows and 384 pockets for dough pieces weighing from 100 to 1100 g. 342 working pockets. Maximum hourly productivity is up to 2500 products per hour with 8 minutes of proofing.
